Monterey Jack BBQ Chicken



So, for the last week or so, I've been craving BBQ sauce. I'm not really sure why, but I have! It's been killing me! Haha. So, I am an avid meal prepper, and decided that I wanted to do something with BBQ chicken for this week.



I made a delicious homemade sugar free BBQ sauce, and it worked absolutely perfect with this recipe! I was so excited that it worked out so well! And, the best part of it... it was SO CHEAP! Ya'll know how this frugal girl likes doing things on the cheap!



Not only was the BBQ sauce super cheap and easy to make, but this meal, in total, only cost about $20. And that includes the side! It made 4 portions, which we used for dinners for meal prep. AND the meal wasn't too hard to cook, either!




This recipe is strictly about the BBQ chicken, but if you're wondering about the side, I used 3 heads of broccoli, chopped, and about a cup of cherry tomatoes cut in half. I seasoned them with salt, pepper, garlic powder, a little bit of thyme and rosemary. I drizzled with olive oil, mixed well, and put on a cooking sheet lined with parchment paper in the oven at 350 for about 20 minutes until the broccoli started to brown and softened slightly.





And now, here's how to make the chicken!

Ingredients:
8 boneless skinless chicken thighs
1/2 cup plus 4 tbsp keto sugar free BBQ sauce  (or store-bought sugar free BBQ sauce), separated
2 10 oz cans Rotel, drained well
9-10 slices of bacon, cooked to a crisp and diced/crumbled
8 oz colby jack cheese

Instructions:
1. In a large ziplock bag or bowl, marinate chicken in BBQ sauce for at least 30 minutes
2. Heat a large, oven safe skillet over medium high heat.
3. Add chicken and let cook on one side about 5-7 minutes until browned
4. Drizzle uncooked side (face up side) with extra BBQ sauce before flipping over in the pan
5. Cook for another 5-7 minutes.
6. While chicken is cooking, use a slotted spoon to scoop Rotel tomatoes evenly onto each piece of chicken
7. Add bacon bits on top of tomatoes
8. Sprinkle cheese on top of bacon and tomatoes
9. Put skillet into the oven at 350 for 15 minutes, or until internal chicken temp reaches 165 and cheese has started to brown
10. Serve hot and enjoy!
